- 1 - 16 oz. package frozen chopped onions and bell peppers
- 2 tablespoons olive oil
- 1- 15 oz. can Italian stewed tomatoes
- 1- 15 oz. can great northern beans ( cannelini beans ok), drained
- 1 cup instant rice
- In large saucepan, saute onions and bell peppers in oil.
- Add stewed tomatoes, beans, 1/2 cup water and rice and stir well. Over medium-high heat, cover and cook about 3 minutes. Uncover and continue cooking another 3 minutes, stirring once, or until rice is tender. Serve
